The softest molten chocolate lava cake you’ll ever taste. Serve warm with a scoop of French vanilla ice cream for the perfect finish to any meal.
Ingredients
- ¾ cup semi-sweet chocolate chips
- ½ cup unsalted butter
- 2 eggs
- 2 egg yolks
- ¼ cup sugar
- 2 tbsp flour
- ½ tsp salt
Instructions
- Melt the chocolate and butter together over a double boiler until smooth. Remove from heat and let cool slightly.
- In a clean bowl, whisk 2 whole eggs, 2 egg yolks, and ¼ cup sugar vigorously until the mixture doubles in volume — about 5–10 minutes.
- Gently fold the warm chocolate into the whipped egg mixture, then add a pinch of salt and mix to combine.
- Slowly fold in 2 tablespoons of flour until no streaks of flour remain and the batter is smooth.
- Butter and lightly flour four 4–6 oz ramekins or bowls. Divide the batter among them, filling each about ¾ full.
- Bake in a preheated 450°F oven for 10 minutes. Bake longer if you prefer a firmer cake; bake less for a runnier center.
- Allow the cakes to rest in the ramekins for 3 minutes. Run a knife around the edges, then invert onto serving plates.
- Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
