Ingredients

  • 16 ounces white American cheese (good quality)
  • 8 ounces cream cheese
  • 10 ounce can Rotel tomatoes
  • 3 tablespoons hot jalapeño slices, diced (plus brine, optional)
  • 1/3 cup salsa verde
  • 2 teaspoons taco seasoning
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1 tablespoon butter
  • 3–5 tablespoons milk, to thin as needed

Instructions

  • Combine white American cheese, cream cheese, taco seasoning, garlic powder, onion powder, cumin, cayenne, salsa verde, butter, Rotel, and diced hot jalapeños in a slow cooker. Heat on Low for about 1 hour, stirring occasionally, until the cheeses are fully melted. Optionally add a few tablespoons of jalapeño brine for extra heat.
  • As the cheeses melt, stir in milk one tablespoon at a time until the dip reaches your desired consistency. When smooth, switch the slow cooker to Warm and stir occasionally while serving. Serve with chips, vegetables, or your favorite dippers.

Notes

Adding some jalapeño brine is optional but adds a bright, spicy tang if you like more heat.

Jarred hot jalapeño slices are usually sold in the condiment aisle near pickles. Regular jarred or fresh jalapeños work fine too.
