Crock Pot Chicken Tortilla Soup
1 onion, chopped
1 16 oz. can chili beans
1 15 oz. can whole kernel corn, drained
1 8 oz. can tomato sauce
1 12 oz. can beer (a light beer works well)
2 10 oz. cans mild Rotel tomatoes
1 package taco seasoning
2 large (or 3 medium) skinless, boneless chicken breasts
Place all ingredients in the slow cooker, stir to combine, and cook on high for 5–6 hours. Remove the chicken, shred with forks, return to the soup, and stir to combine.
