These are rocky road brownies, but not just any rocky road — they’re finished with Funfetti marshmallows for a bright, playful twist. If you prefer, use regular mini marshmallows and add sprinkles separately. The sprinkles really do make the finished brownies feel more festive, so don’t skip them if you want a fun presentation.

Funfetti Rocky Road Brownies

Ingredients
- 4 ounces unsweetened chocolate, chopped finely
- 8 tablespoons unsalted butter, cut into small pieces
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup walnuts
- 1/3 cup semisweet chocolate chips
- About 30 mini marshmallows or chopped Funfetti marshmallows
- Sprinkles, if not using Funfetti marshmallows
Instructions
- Preheat the oven to 325°F (165°C).
- In a medium saucepan over low heat, melt the butter and unsweetened chocolate together, stirring frequently until smooth.
- Remove the pan from the heat and stir in the sugar. Add the eggs one at a time, then stir in the vanilla extract until combined.
- Fold in the flour until the batter is uniform.
- Scrape the batter into a prepared 8-inch pan coated with baking spray. Smooth the top, then sprinkle the semisweet chocolate chips and walnuts evenly over the batter.
- Bake for about 25 minutes. Immediately after removing the pan from the oven, press the mini marshmallows or chopped Funfetti marshmallows gently into the warm brownies so they melt slightly into the surface.
- Allow the brownies to cool on a wire rack. These brownies are dense and cake-like—rich and fudgy.
