Sticky Sesame Cauliflower

This secretly healthy sticky sesame cauliflower captures the sticky-sweet sauce you love in a lighter, plant-based dish.

Ingredients

  • 1 small head cauliflower, chopped (about 6 1/2 cups florets)
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup pure maple syrup, or honey/agave
  • 1/4 cup rice vinegar
  • 1 tbsp minced garlic
  • 1 1/2 tsp toasted sesame oil
  • 1/2 tsp powdered ginger
  • 1 1/2 tbsp cornstarch or arrowroot
  • 1/4 cup water
  • sesame seeds and scallions, for garnish

Instructions

  • 1. Preheat the oven to 450°F (230°C). Grease a baking pan or line it with parchment. Cut cauliflower into florets and slice so one side of each floret sits flat. Arrange florets in a single layer on the prepared pan.

    2. Bake on the center rack for 10 minutes. While the cauliflower starts roasting, combine soy sauce, maple syrup (or honey/agave), rice vinegar, garlic, sesame oil, and powdered ginger in a small saucepan. Bring the mixture to a boil over medium heat.

    3. In a small bowl, stir the cornstarch or arrowroot into the water until fully dissolved. When the sauce reaches a boil, slowly whisk the cornstarch mixture into the pan. Reduce heat to medium and cook about 2 minutes, stirring frequently once it returns to a boil, until the sauce has thickened. The sauce will thicken further as it cools.

    4. Flip the cauliflower florets and return them to the oven for another 10 minutes. If you like extra caramelization, move the pan to the top rack and broil 1–2 minutes (watch closely so it doesn’t burn).

    5. Remove the cauliflower from the oven, pour the sauce evenly over the florets, and toss gently or spoon sauce on top. Garnish with sesame seeds and sliced scallions. Serve immediately.

    *Some readers report success adapting this to an Instant Pot; I haven’t tested that method myself. If you try it, please share your experience.
