Molten Chocolate Lava Cake
The softest molten chocolate lava cake you’ll ever taste. Serve warm with a scoop of French vanilla ice cream for the perfect finish to any meal.

Ingredients

  • ¾ cup semi-sweet chocolate chips
  • ½ cup unsalted butter
  • 2 eggs
  • 2 egg yolks
  • ¼ cup sugar
  • 2 tbsp flour
  • ½ tsp salt

Instructions

  1. Melt the chocolate and butter together over a double boiler until smooth. Remove from heat and let cool slightly.
  2. In a clean bowl, whisk 2 whole eggs, 2 egg yolks, and ¼ cup sugar vigorously until the mixture doubles in volume — about 5–10 minutes.
  3. Gently fold the warm chocolate into the whipped egg mixture, then add a pinch of salt and mix to combine.
  4. Slowly fold in 2 tablespoons of flour until no streaks of flour remain and the batter is smooth.
  5. Butter and lightly flour four 4–6 oz ramekins or bowls. Divide the batter among them, filling each about ¾ full.
  6. Bake in a preheated 450°F oven for 10 minutes. Bake longer if you prefer a firmer cake; bake less for a runnier center.
  7. Allow the cakes to rest in the ramekins for 3 minutes. Run a knife around the edges, then invert onto serving plates.
  8. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
