These “cookies” are an easy grab-and-go breakfast that still delivers protein and nutrients to keep you fueled through the morning. They taste like peanut butter, cinnamon, and oatmeal combined into a soft, chewy cookie — a delicious way to enjoy familiar breakfast flavors on the run.

How to assemble Healthy Breakfast Cookies
Start by mixing the wet ingredients in a stand mixer until smooth. Add the dry ingredients and mix until incorporated, saving the nuts and craisins to fold in last so they stay evenly distributed.
The dough will be thick — these are drop cookies, not roll-and-cut cookies. Use roughly 1/4 cup of unpacked dough per cookie and drop onto a parchment-lined baking sheet. Silicone baking mats work well as reusable liners and make cleanup easy.
These cookies won’t spread much in the oven, so space them with that in mind. The recipe scales easily: double or triple it to feed a crowd. Feel free to swap the craisins for other dried fruit or replace walnuts with almonds or another favorite nut.

Ingredients
- ½ cup peanut butter
- 3 tablespoons butter, softened
- ⅓ cup honey
- 1 teaspoon vanilla
- 2 eggs
- ¼ cup ground flaxseed
- 2 cup oats
- 2 teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup nuts (walnuts recommended)
- ½ cup craisins
Instructions

Preheat the oven to 350°F (175°C).

In a stand mixer (or large bowl), combine the butter, peanut butter, and honey. Mix until smooth.

Add the vanilla and eggs, mixing until fully incorporated.

Stir in the ground flaxseed, oats, cinnamon, and salt. The mixture will be very thick.

Fold in the nuts and craisins until evenly distributed.

Drop large spoonfuls of dough onto a parchment-lined baking sheet. They will not spread much.

Bake for 8–10 minutes, or until the edges are set. Allow to cool slightly before removing.
Notes
- Swap walnuts for another nut such as almonds, or omit nuts completely if desired.
- Try different dried fruit — dried blueberries or cherries work well — to vary the flavor.
