My first fish taco experience was a pleasant surprise—I wasn’t sure I’d like it, but the flavors won me over. Later, I tasted Mahi Mahi topped with mango salsa and it was outstanding. That inspired this version combining mahi mahi, mango, and watermelon into a colorful, refreshing taco that evokes summer.

The mix of sweet mango, crisp watermelon, and lime brightens the fish, and the easy preparation makes these tacos a great option for casual dinners or summer gatherings. Even picky eaters tend to enjoy the contrast of sweet and savory.

Ingredients
For Mango Watermelon Salsa
1/2 cup diced mango
1/2 cup diced watermelon
1/2 teaspoon sugar
Juice from 1/2 lime
Pinch of salt
1 teaspoon cilantro paste or chopped cilantro
For Mahi Mahi
1–2 tablespoons butter or coconut oil
3 mahi mahi fillets
2–3 tablespoons cilantro paste or chopped cilantro
Juice from 1 lime
Small tortillas for serving
Instructions
For the Mango Watermelon Salsa
Combine diced mango and watermelon in a bowl. Add lime juice and cilantro paste (or fresh cilantro), then stir in sugar and a pinch of salt. Mix well and set aside to let the flavors meld.
For the Mahi Mahi
Heat a skillet over medium heat and melt the butter or coconut oil. Squeeze lime juice over the mahi mahi fillets and lightly coat them with cilantro paste or fresh cilantro. Place the fillets in the hot skillet and cook about 4–5 minutes on the first side. Flip and cook another 3–4 minutes, or until the fish is opaque and flakes easily with a fork. Remove from heat and shred the fillets with two forks.
Warm the tortillas, fill each with shredded mahi mahi, and top generously with the mango watermelon salsa. Serve immediately for a bright, summery taco that yields about six tacos.
