How to make

  • Prepare the chicken – Slice the breasts into cutlets by making a horizontal cut if needed, or pound thick areas with a meat mallet or rolling pin to an even thickness so they cook consistently.

Important Tips

  • Use regular fine breadcrumbs rather than panko for this recipe; they cling better when you skip eggs and use oil as the binder. If you only have panko, pulse it in a food processor until finer.
  • We skip eggs here to keep the coating lighter; oil helps the crumbs stick, but panko tends to slide off without an egg wash.
  • Brining the chicken briefly can increase juiciness and help the pieces reach room temperature for more even cooking.
  • Do not overcrowd the air fryer basket. Leaving space around each piece ensures hot air circulates and produces an even crust.
  • Allow the chicken to rest for a few minutes after air frying so the juices settle before slicing.
  • Do not cook frozen chicken from frozen in this breaded method; thaw fully and, if desired, brine first for best results.

Instructions
