  • 1 egg
  • 1/2 cup / 50g oats
  • 1/3 cup blueberries
  • 1 Tbsp yogurt
  • vanilla (to taste)
  • 1/2 tsp baking soda
  • 1 tsp coconut oil or butter

Instructions

  1. Place the egg, banana, oats, yogurt, baking soda and vanilla in a blender or use an immersion blender. Blend until smooth.
  2. Grease a non-stick pan with coconut oil or butter and pour the batter to form small pancakes.
  3. While cooking, top each pancake with blueberries.
  4. When the edges look set and the underside is golden, flip and cook until the other side is golden brown.
