  • Spread the refried bean substitute in an even layer over the bottom tortilla. Next, distribute the cooked, chopped chicken or beef evenly across the beans so every slice receives protein in each bite. Drizzle the keto hot sauce over the meat in a thin, even stream to add flavor; adjust the amount to taste for milder or spicier results. Finish this layer with the crumbled mozzarella.

  • Cover the assembly with the remaining large tortilla. Spoon and spread the keto salsa over the top tortilla in an even layer. Sprinkle the shredded Colby cheese over the salsa to create a golden, melty topping. If you like a crisper top, place the pan on the upper rack of the oven for the final minutes of baking.

  • Bake in the preheated oven for 20 to 25 minutes, until the dish is heated through and the cheese is completely melted and bubbly. Oven times vary slightly, so check at 20 minutes and continue only until heated through.
