Steps to make lemon balls

  • Step 1: In a large bowl, combine the almond flour, coconut flour (or protein powder), maple syrup, melted oil or butter, lemon juice and zest, vanilla, optional almond extract, and a pinch of sea salt. Mix until a soft cookie-dough-like ball forms. If the mixture is too wet, add a tablespoon of almond flour or protein powder at a time until it holds together.
  • Step 2: Scoop the dough into even portions using a spoon or a small cookie scoop and roll into balls. Place them on a parchment-lined baking sheet.
  • Step 3: Freeze the shaped balls for about 30 minutes to firm up—the brief chill helps them hold their shape when dipped.
  • Step 4: Melt the white chocolate with a little coconut oil until smooth, either in a double boiler or in short bursts in the microwave, stirring between intervals. Dip each chilled truffle into the melted chocolate, let excess drip off, and return to the tray.
  • Step 5: Sprinkle extra lemon zest on top if desired, then freeze the coated truffles for 3–4 hours or until fully set. Store in an airtight container in the freezer and enjoy straight from frozen—the texture stays pleasantly soft and doughy.

Instructions

  1. Note: If your almond flour is a bit grainy, pulse the mixture in a food processor for a smoother cookie-dough texture.
  2. Combine all ingredients for the dough in a large bowl. Mix until a soft dough forms. If too wet, add almond flour or protein powder by the tablespoon until it holds together.

Notes

If using protein powder, plant-based vanilla protein works best. Whey protein absorbs differently and may change the texture, so it’s not recommended for this recipe.
