  • 1.2 pounds boneless, skinless chicken breasts (about 2 even-sized breasts)
  • 2 teaspoons Italian seasoning, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup sun-dried tomatoes in oil, plus the oil
  • 1 tablespoon minced garlic
  • 1 cup reduced-sodium chicken broth, divided
  • 1 cup heavy cream
  • 1/3 cup finely grated Parmesan cheese
  • 2 teaspoons Dijon-style mustard
  • 1/4 to 1/2 teaspoon red pepper flakes (optional)
  • 3/4 cup ribboned fresh basil

Instructions

  • Slice each chicken breast in half crosswise to make thinner cutlets. Pound lightly if needed for even thickness. Mix 1 teaspoon Italian seasoning with the salt and pepper and season one side of each piece.
  • Heat 2 tablespoons of the oil from the sun-dried tomato jar in a large, heavy skillet over medium-high heat. Add the chicken seasoned side down. Sprinkle the remaining seasoning on the top side. Cook undisturbed about 4 minutes, flip, and cook another 3–4 minutes until golden and cooked through (165°F internal). Remove chicken and tent with foil to keep warm.
  • Reduce heat to medium. Add about 1 teaspoon more sun-dried tomato oil and the garlic. Cook about 10 seconds until fragrant but not browned. Pour in 1/2 cup chicken broth and scrape up browned bits, simmer until mostly evaporated, about 1 minute.
  • Add the remaining 1/2 cup broth, heavy cream, sun-dried tomatoes, red pepper flakes if using, remaining 1 teaspoon Italian seasoning, Dijon, and Parmesan. Stir until the cheese melts and the sauce thickens, about 2–4 minutes. Taste and adjust seasoning.
  • Stir in the basil, return the chicken and any juices to the pan, spoon sauce over the chicken, and serve immediately.
