Ingredients

    Tiger shrimp
    remove shells and veins
  • 2-3
    Lemons
    thinly sliced

  • cup
    Dry white wine
  • 3-4
    tbsp
    Unsalted butter
  • 3-4
    springs
    Rosemary
  • 2
    tsp
    Freshly chopped basil
  • 2
    tsp
    Freshly chopped oregano

Seafood Dry Rub

  • 1

    Kosher salt
  • 1

    Garlic powder
  • 1

    Black pepper
  • 1

    Red pepper flakes
  • 1
    Lemon
    juiced

Instructions:

  1. Peel and devein the shrimp. If you prefer, many fishmongers will do this for you.
  2. Preheat your smoker to 275°F and add hickory wood chunks for smoke flavor.
  3. In a medium bowl, toss the shrimp with the seafood dry rub: kosher salt, garlic powder, black pepper, red pepper flakes, and lemon juice. Optionally add lemon zest for extra brightness.
  4. In a 12″ cast iron skillet, arrange a single layer of thin lemon slices to cover the bottom. Arrange the shrimp in a spiral or concentric circles, all facing the same direction. Scatter the chopped basil, oregano, and rosemary sprigs over the shrimp.smoking shrimp
  5. Place the skillet on the smoker and smoke for 20 minutes. After 20 minutes, pour in the white wine and dot with the butter.
  6. Continue smoking for another 20 minutes, then check the internal temperature.
  7. Once the shrimp reach an internal temperature of 165°F, remove the skillet from the smoker. Squeeze fresh lemon juice over the shrimp and add hot sauce if you like.
